New openings: I love them! Especially when they look as good as the new CT Coffee & Coconuts and have a good story. It started with Bas Beijer who was the owner of the Hutspot Cafe at the van Woustraat. While he was dreaming on starting a business on his own, he walked past the old Ceintuur Theater and saw that it was for rent. After some phone calls, he learned that the municipality wanted to give it new meaning as a restaurant/cafe and he send them his ideas. Together with the former owners of Tijn Akersloot they started working on their concept and the interior. The concept is that they like to bring together inspiring food makers and share their passion with the customers. For example: coffee of Bocca, sausages of Brandt & Levie and together with Oedipus Brewery they even made a beer especially for CT Coffee & Coconuts. The menu is full of delicious things: because they open at 7am already, you can sit down for breakfast, lunch or later at night a hamburger or salad (they close at 10pm). Also on the menu are juices: I’ve tried their coconut juice and it comes in a coconut (very Instagram worthy).

When Bas walked in this place in January he immediately knew he loved this place. You have various levels. The upper level (with the plants) didn’t even had stairs so they changed quite a lot of the place. They did most of it themselves but, and here’s another inspiring spot coming in, Atelier Sukha of Sukha in the Haarlemmerstraat helped them with the bean bags, the rugs, the pillows and much more! Also don’t forget to take a look at the ‘hanging’ tables on the first floor. Made by a guy who used to work at Cirque du Soleil: funny! The location is perfect: in de Pijp, close to the new subway station which will open in the near future.
