On a cute corner on Rue Charlot in Le Marais you will find Carbon, a new stylish restaurant that brings an ode to nature to their customers.
Argentinian inspired dishes
Sabrina Goldin was born in Buenos Aires and her boyfriend and partner at Carbon in the Ivory Coast. Together they’ve attracted a multi-cultural Parisian team with only one thing in mind: to bring the best Argentinian inspired dishes to the wooden tables. The chef, David Kjellstenius, is from Sweden and works from the semi-open kitchen with a Josper grill to make sure the meat has the right tenderness.
Sabrina explains to me that the idea of the menu is to share dishes and you can choose for small or large sharing dishes. The whole menu is inspired by the raw beauty of each ingredient. She recommends the carrots from the small sharing menu, just like terrine de boeuf. We also order the smoked burrata which is amazing. Go for the hay smoked duck breast or the rib eye steak if you love to share a larger dish together with your friends.
Apart from the restaurant with a beautiful interior done where everything was hand-made for Carbon. In the back you will find a lovely private dining room (look at the ceiling you will love it!). There’s a bar where they serve cocktails on tap. They also opened a cocktailbar in the basement. And they are also open for a coffee and a croissant or lunch.
